A Regenerative Vision of the Monte Grappa Foothills

3|6|9 is the founding wine of Ca’ da Roman and the first expression of a project shaped by patience, regenerative agriculture and a contemporary interpretation of the Veneto foothills. Its name reflects the winery’s original timeline, beginning with three years of green manuring and natural soil regeneration before the first vineyard of Souvignier Gris, a PIWI fungus-resistant grape variety, was planted.

Ca’ da Roman forms part of the wider Ca’ Apollonio Heritage estate, centred around a historic sixteenth-century residence and its surrounding agricultural landscape. Restored heritage, organic farming and forward-looking PIWI winegrowing come together in a project recognised across the Emerging Terroirs, Distinct Identities and Castles, Abbeys & Historic Estates collections.

In Romano d’Ezzelino, at the foothills of Monte Grappa in Veneto, Italy, Souvignier Gris encounters mineral-rich clay-loam soils between mountain influence and the Venetian plain. Aromatic herbs, white-fleshed fruit and a persistent mineral note lead to a dry, structured palate combining freshness, substance and unconventional elegance.

Vinified and matured in stainless steel on fine lees under the direction of Nicola Biasi, 3|6|9 transforms regenerated soils and resistant vines into a precise expression of origin.
