A Regenerative Vision of the Monte Grappa Foothills

3|6|9 is the founding wine of Ca’ da Roman and the first expression of a project shaped by patience, regenerative agriculture and a contemporary interpretation of the Veneto foothills. Its name reflects the winery’s original timeline, beginning with three years of green manuring and natural soil regeneration before the first vineyard of Souvignier Gris, a PIWI fungus-resistant grape variety, was planted.

Ca’ da Roman forms part of the wider Ca’ Apollonio Heritage estate, centred around a historic sixteenth-century residence and its surrounding agricultural landscape. Restored heritage, organic farming and forward-looking PIWI winegrowing come together in a project recognised across the Emerging Terroirs, Distinct Identities and Castles, Abbeys & Historic Estates collections.

In Romano d’Ezzelino, at the foothills of Monte Grappa in Veneto, Italy, Souvignier Gris encounters mineral-rich clay-loam soils between mountain influence and the Venetian plain. Aromatic herbs, white-fleshed fruit and a persistent mineral note lead to a dry, structured palate combining freshness, substance and unconventional elegance.

Vinified and matured in stainless steel on fine lees under the direction of Nicola Biasi, 3|6|9 transforms regenerated soils and resistant vines into a precise expression of origin.

Sensory profile

APPEARANCE
Bright straw yellow, occasionally showing subtle greenish to light golden reflections depending on vintage and evolution. The visual profile remains clear and luminous, consistent with a still white wine aged in steel.

AROMATIC PROFILE
The nose is defined by white-fleshed fruit, citrus and aromatic herbs, with recurring notes of peach, green apple, sage and fresh herbal nuances. White flowers and delicate orange-blossom tones may emerge alongside a restrained mineral character. Across different vintages, secondary accents of ginger, thyme, coriander and light spice have also been noted, adding complexity without overwhelming the varietal profile.

ON THE PALATE
The palate is direct, structured and taut, combining a medium-to-full body with lively acidity and a marked savoury-mineral component. The wine shows substance without heaviness, with a clean progression and a firm but agile profile. Fine-lees ageing in steel contributes to texture and breadth while preserving freshness and definition.

FINISH
The finish is clean, savoury and slightly herbal, with citrus returning alongside a subtle mineral and occasionally gently bitter edge. Persistence is measured rather than expansive, but the closing impression remains precise and energetic.

OVERALL BALANCE
3|6|9 balances body, acidity and savoury tension particularly well. Its structure is more substantial than that of a light aromatic white, yet the wine retains freshness and drinkability. The recurring combination of fruit, herbs and mineral tension gives the wine a recognisable stylistic continuity across vintages.

Its identity is built around 100% Souvignier Gris, organic viticulture, fine-lees ageing in stainless steel and the first vineyard planted by Ca’ da Roman after three years of green manure and regenerative soil preparation.
