BELLAGUARDIA Zero — Pas Dosé, Traditional Method
BELLAGUARDIA Zero — Pas Dosé, Traditional Method
On the southern slopes of the hill crowned by the castles of Romeo and Juliet, in Montecchio Maggiore, Veneto, Italy, BELLAGUARDIA ZERO Pas Dosé originates from the Galantiga vineyard, 200 metres above sea level, where calcareous loamy, silty-clay soils nurture Pinot Bianco and Durella. Two grape varieties with distinct personalities come together in a Traditional Method sparkling wine that interprets this historic landscape through a language of restraint and precision. ZERO finds its identity not in abundance, but in the authentic expression of its grapes, its place and the passage of time.
Hand-harvested grapes, carefully collected in crates and subsequently cooled, undergo gentle pressing before fermentation in temperature-controlled stainless steel. Secondary fermentation in the bottle initiates an extended period of maturation on the lees, exceeding 80 months for the 2017 vintage, according to the producer's information. At disgorgement, neither sugar nor sulphites are added: a deliberate choice that transforms the name ZERO into a statement of winemaking philosophy, preserving the wine's expressive purity without final adjustments. Extended lees ageing builds depth and finesse, allowing Durella's natural tension and Pinot Bianco's harmonising contribution to emerge with clarity.
In the glass, a luminous straw-yellow appearance introduces a clean, harmonious aromatic profile, where white blossoms, ripe fruit and delicate suggestions of bread crust accompany the complexity developed through prolonged lees contact. The palate is exceptionally dry, elegant and finely structured, revealing nuances of slightly underripe apricot, pineapple and a subtle touch of liquorice. Freshness, texture and precision define a sparkling wine that unites vibrancy with maturity, without relying on artificial softness or unnecessary aromatic embellishment.
BEYOND* — The Identity of Essentials. ZERO represents a personal interpretation of the Traditional Method, where the marriage of Pinot Bianco and Durella, the character of the Galantiga vineyard and the patience of extended maturation converge in a rigorous winemaking vision. Its significance lies not merely in the absence of dosage, but in the coherence between origin, method and expression: a wine that transforms restraint into character, maturation into depth and deliberate simplicity into a form of authentic distinction.

Sensory profile
APPEARANCE
Luminous straw yellow with golden reflections, particularly pronounced in the documented 2017 vintage. Fine, lively and regular bubbles create a delicate mousse, conveying both freshness and maturity. The AIS Veneto tasting highlights a distinctive golden brilliance, consistent with the aromatic development associated with prolonged bottle maturation.
NOSE
The producer's characteristic notes of ripe fruit, white blossoms and bread crust gain further complexity in the professional tasting of the 2017 vintage, which identifies candied citron, thyme, marjoram, pollen and broom blossom. Subtle smoky impressions and an underlying exotic-fruit character add further depth. The aromatic profile is layered yet precise, balancing floral expression, fruit maturity and evolved complexity without sacrificing clarity.
PALATE
An assertive, sharply defined opening, driven by incisive freshness and fine effervescence. Slightly underripe apricot, pineapple and delicate liquorice nuances reflect the producer's tasting profile. The AIS assessment of the 2017 vintage adds a progressively savoury dimension and impressions of small, unripe fruits. The palate remains exceptionally dry, energetic and clearly articulated, with a distinctive interplay between acidity, texture and fruit expression.
BALANCE & STRUCTURE
Structure develops through the interaction of Durella's natural acidity, Pinot Bianco's contribution to texture and the depth acquired through extended lees maturation. The absence of dosage exposes the relationship between freshness, substance and effervescence with particular clarity. Lees ageing brings tactile complexity without diminishing the wine's tension. Balance is achieved through precision and integration rather than sweetness or pronounced softness.
EVOLUTION IN THE GLASS
With gentle aeration and a gradual rise in temperature, fruit and floral notes may reveal greater nuances of candied citron, aromatic herbs, bread crust and the subtle smoky character documented in the 2017 tasting. As the initial effervescence settles, the wine's texture and savoury progression become more apparent. This evolving profile rewards attentive tasting and a serving temperature that allows its mature aromatic components to unfold.
FINISH
Persistent, distinctly dry and sustained by focused freshness. Citrus impressions, slightly underripe fruit and delicate herbal nuances accompany a savoury finish, while mature aromatic complexity remains carefully integrated. The aftertaste conveys precision and continuity rather than excessive richness, with the balance between fresh fruit and evolved notes depending on the development of the individual bottle.
SENSORY IDENTITY
ZERO expresses a distinctive partnership between Pinot Bianco and Durella: the former contributes continuity and texture, while the latter provides much of the blend's characteristic acidic tension. Prolonged lees maturation expands the aromatic spectrum from fruit and flowers towards autolytic, herbal and subtly smoky nuances documented in the 2017 vintage. The Pas Dosé approach, with no added sugar or sulphites at disgorgement, reinforces a deliberately restrained and recognisable winemaking identity.
SERVING TEMPERATURE
8–10°C. (46–50°F.), allowing the temperature to rise gradually towards 10–12°C. (50–54°F.) in the glass to reveal greater aromatic maturity. A generously proportioned tulip glass or an elegant white wine glass is recommended to encourage aromatic development while preserving the perception of the fine mousse. Excessive chilling may suppress the floral, herbal and lees-derived nuances that distinguish this mature expression.
BEYOND* INTERPRETATION
ZERO offers a personal interpretation of the Traditional Method through the Galantiga vineyard, on the southern slopes of the hill crowned by the castles of Romeo and Juliet, in Montecchio Maggiore, Veneto, Italy. The union of Pinot Bianco and Durella, the vineyard's calcareous soils and patient maturation shape a wine defined by precision, tension and complexity without dosage. For BEYOND, ZERO embodies restraint as an expression of identity: not an absence of depth, but a deliberate approach through which origin, time and winemaking discipline achieve a distinctive voice.*
